Fresh basil from my front porch! I feel like it's finally summer when I can make pesto, one of my all-time favorite meals.
Here's a great basil pesto recipe... with mint added in for a little twist:
Basil-Mint Pesto
1 cup basil leaves
1/4 cup mint leaves
1/8 cup pine nuts
1/4 cup parmesan cheese
1/4 cup olive oil
Kosher salt to taste
Fresh ground black pepper to taste
Pulse basil, mint, pine nuts & cheese in food processor. Drizzle in olive oil and process to combine. Continue adding oil to desired consistency. Season with salt & pepper to taste.
Serve it on pasta, or over chicken. Sooo easy and super yummy!
